  20. 3/4 cup jaggery + 1 tbsp salt+ 1/2tpn garam masala+ black pepper
  21. As needed Chilli powder+ chaat masala+ 2 spoon raw boiled mango pulp

Instructions to make to make Pani Puri kolkata style

  1. Puri - 1. take wheat flour or semolina and add little water at a time and knead it to form a dough. Dough should neither be too hard/thick nor too soft/thin or sticky. It should have medium.
  2. 2. Cover the dough with a damp muslin cloth or tea towel, keep it aside for 30 mins. After 30 mins, divide the dough into 8 or 10 equal sized uniform balls.

    Mix all the ingredients well and store in a jar.

    Take 1 ltr water add jaggery, 2 tbsp raw boiled mango pulp, 2 tbsp coriander and mint paste, red chilli powder, coriander powder, black salt, chaat masala, bundi, black pepper and mix it well
  8. For filling
    Take boiled and mashed potatoes and add chopped onion, green coriander and mint chutani, chaat masala, salt as per taste if you like more spicy than add 1 green chilli
