Ingredients and spices for Kitchari, aaloo ka chokha aur dhaniya ki chutney:
- Lakhshadi and Aloo Ka Chuka
- 1 cup uncooked rice
- 1/2 cup yellow/mung dal lentils
- 6 medium boiled potatoes
- 2 medium onions finely chopped
- 1/4 cup peas
- 1/4 carrot, finely grated (optional)
- 1 large tomato, finely chopped
- 6 cloves of garlic, finely chopped
- 1/2 teaspoon cumin
- 4 dried red chilies
- 1 teaspoon of turmeric powder
- 1/4 teaspoon red pepper powder
- 1 tablespoon coriander leaves
- 3 spoons of mustard oil
- Enough clarified butter
- 1 lemon juice - as desired
- 2 teaspoons of salt
- For the lamb sauce
- 1 cup finely chopped cilantro
- 6-8 white garlic
- 3-4 green peppers or chili peppers
- 1 whole grain / 2 teaspoons lemon juice
- 2 spoons of mustard oil
- 1/2 teaspoon of salt
Khichari, aaloo ka chokha aur dhaniya ki chutney preparation steps
- Heat a heavy-bottomed pan over medium heat and fry the beans until golden brown. Wash the drumstick and rice together at least three times.
- Place the drumstick and rice in the pressure cooker. Add double + 1 glass of water. Now add turmeric powder, salt and grated carrot to the mixture and cook for 3 whistles on medium heat. Invite him of course.

- Add the roasted masala to the cooked rice and mix very gently. If the mixture is too thick, add a little water and mix well. Cook on low heat for another 5 minutes so that the flavors blend well. Add 1 teaspoon of coriander leaves and mix well.
- For Aloo Bharta: When the cooked potatoes are hot, mash them gently using the back of a plate. Add roasted red onion, roasted red pepper, salt and chopped coriander leaves and mix well with your hands. Stand aside.
- Dhaniya ki chutney - Put all the ingredients in a bowl and make a smooth paste.
- Serve fork fresh khichdi, gravy, fresh curd, sour cream and papad to taste with pure ghee/lime juice.
