Ingredients and seasonings for making giant stuffed and fried pasta:
- 10 giant noodles
- Oil for frying if required
- For the filling:
- 1 small head of broccoli, thinly sliced
- 1 cup chopped baby spinach (or regular)
- 3 cloves of garlic, finely chopped
- 1 chicken breast, cooked and thinly sliced
- 4 tablespoons feta cheese
- 1 teaspoon salt or to taste
- 1 teaspoon black pepper powder
- 1 tablespoon of butter
- 1 tablespoon olive oil
- For the Alfredo Sauce:
- 2 spoons of butter
- 1 cup full cream
- 3/4 cup dehydrated potato flakes
- 1 cup finely grated Parmesan
- 1 tablespoon dried basil
- 1 teaspoon salt or to taste
- 1 teaspoon black pepper powder
- For outer coating:
- 1 beaten egg
- 1 cup breadcrumbs or oats/raw as needed
Instructions for making giant stuffed and fried pasta
- For the filling --- Heat butter and oil in a non-stick pan. Add garlic and fry for 30 seconds.
- Add broccoli, spinach and chicken. Brown for 5 minutes, stirring. Add feta and fry. Season with salt and pepper, remembering that feta is a salty cheese. Set aside
- For Alfredo Sauce --- Heat a saucepan. Add the butter. Add cream when melted. Cook till the sauce thickens. Add Parmesan, herbs, salt and pepper to taste.
- Add potato flakes and mix well. The sauce will thicken. Stir the prepared filling into the sauce and stir to combine well.
- Assemble --- Boil the noodles in plenty of salted water for 15 minutes. Drain and set aside under cold water.
- Heat a deep, heavy-bottomed saucepan with oil. Fill the molds with 2 teaspoons of the stuffing and if the stuffing does not come out, seal the edges.
- Dip shells in egg and coat with breadcrumbs or crumbs. Fry in oil on medium heat until golden brown on all sides.
- Place on a plate lined with paper towels to drain oil. Serve with any sauce of your choice.
- Note --- Adding chicken is completely optional. Replace eggs with milk/cream.
